A decade ago, I was exhibiting at one of the Los Angeles Gift Shows. My neighbor was this amazing woman whose booth was filled with “artful food”. Not only was she charming and friendly, but she had samples. Trade shows are notorious for BAD food.  While we chatted, I ate one (or two or three) of everything, and I fell in love with her products.

This was way before I had retail store,s and I convinced her to to send me crates of this stuff.  Soon my family was just as addicted as I was.  Although it is perfectly delicious on it’s own, I have incorporated it into my weeknight meals.

Over easy eggs with sundried tomato pesto, topped with fresh basil – heaven

This is equally good with the obvious, pasta. Top it off with really good olive oil, Parmigiano Reggiano, and a bit of fresh basil – delish.

I am always looking for new ways to serve chicken. Last night, I lightly pan fried some chicken breasts coated in panko. Smeared the cooked chicken with some of the traditional pesto, then cooked in a 400* oven for about 5 minutes. Once out of the oven, sprinkle with Parmigiano Reggiano.

Quinoa has become a staple in our house. And it doesn’t take much time to prepare. For this dish, saute some garlic in olive oil till golden, add the quinoa per package instructions, throw in some chopped asparagus in the last 5 minutes of cooking. When done add two heaping tablespoons of sun dried tomato pesto and fresh mozzarella and basil. YUM!
